These are my 2 favorite recipes (also guest favorites) when I innsit. Both can be prepared the night before and baked in the morning.
Cheese Egg Puff
10 eggs
½ c. flour
½ tsp salt
2 cups cottage cheese
4 cups shredded colby/jack cheese
½ cup melted butter, cooled
Beat eggs until lemon colored Add the rest of the ingredients and mix well. (I use a blender or food processor.) Optional: add fresh basil, green onions or chopped red peppers if desired. Pour into buttered 9X13 baking dish. Bake at 350 degrees for 35 minutes til firm and slightly brown on top. Cut in squares and serve with salsa or sour cream (also good with roasted pepper sauce). This can be cut in half and baked in a 9 inch square pan.
Baked Apple French Toast
1 cup brown sugar
½ cup butter
2 Tbl. Corn Syrup
3 Granny Smith apples, peeled and sliced
5 eggs
1 ½ cups milk
1 tsp. Vanilla
1 loaf French or challah bread
Cook sugar, butter and syrup until syrupy. Pour into 9x13 baking dish. Spread apples over syrup. Cut bread into cubes and place over apples. Mix eggs, milk and vanilla and pour over bread. Cover and refigerate overnight. Bake uncovered 45-55 minutes at 350 degrees.
